2 auberginer
1/2 dl rigtig god olivenolie
2 dl yoghurt
1 spsk spidskommen
3-4 spsk tahin
2-3 fed hvidløg
Citronsaft
Hakket bredbladet persille
Salt og peber

De to auberginer prikkes hele vejen rundt med en gaffel og bages i ovnen ved 200 grader i 40 minutters tid til de er godt bløde. Lad dem køle af inden de halveres og det bløde kød skrabes ud og moses med en gaffel. Man kan også tage lidt af skrællen med. Spidskommen ristes på en tør pande og hvidløget hakkes fint. Alle tingene røres sammen og baba ganoushen smages godt til.
